History of a soil :
Les Vignerons du Mont Ventoux's programme of premium wines is richer with a new element : a Côtes du Ventoux derived from organically-grown grapes, certified by the organisation ECOCERT.
The vineyards where these grapes are grown are established at Bedoin and Serres, on chalky, clayey soils.
Their exposure, sheltered from pollution and humidity, enables to lead to ripeness sound grapes, applying a minimum of natural treatments. No herbicide at all is used. The ploughing and hoeing, the use of organic fertilisers only and a vigilant watch on the sanitary state of the vines and grapes are the rule to achieve a harvest, which enables the production of an 'organic' wine conforming to a rigorous charter of specifications.
History of a know-how :
Careful selection of the harvest, which is partially de-stemmed. Each grape variety is vinified apart. Long maceration with several daily “remontages”, pumping-over of the vat juice onto the cap of solids. Alcoholic fermentation at controlled temperature (28/30°C). Blending after completion of the malolactic fermentation. The wine is aged for 8 months in vats. The final blending is then effected and the wine bottled in the exclusive, engraved “Bédoin” bottle.
History of sensations :
Eye : Dark garnet robe with purple hues.
Noze : Expressive bouquet with fruity aromas reminding ripe cherry and plum with a touch of spices.
Mouth : A solid wine with a pleasantly rustic texture and well-rounded tannins. Very good length in mouth with an outstanding persistence of the aromatic complexity.
Histoire of pleasure :
Recommended as an accompaniment to red and white meats and to medium strong cheeses; organic produces of course.
To drink now while young, or from 4 to 6 years.
