History of a soil :
DOM BALAQUÈRE, from the name of a character of a famous Provençal short-story written by Alphonse Daudet, is one of the main examples of Les Vignerons du Mont-Ventoux winery’s move aiming at offering outstanding styles of A.O.C. Côtes du Ventoux wines achieved through the selection - of the soils and grapes -, the wine-making and maturing techniques but never forgetting the principle of faithfulness to the typicity of the appellation before all.
Sols : chalky-clayey, slightly sandy soils.
History of a know-how :
Careful selection of the best vineyards on each site of production.
Optimal sanitary state of the harvest which is totally destemmed.
Each grape variety is vinified apart.
Long maceration with several daily “remontages”.
pumping-over of the vat juice onto the cap of solids.
Alcoholic fermentation at controlled temperature (28/30°C).
Blending after completion of the malolactic fermentation.
The wine is kept for 12 months in vats.
History of sensations :
Eye : Dark garnet robe with purple hues.
Nose : Open bouquet combining fruity aromas – red berries and blackcurrant – and peppery, woody and mentholated notes.
Mouth : In mouth, the same aromatic complexity is found, allied to an uncommon concentration of the syrah grape translating into a long and lavish finish.
Histoire of pleasure :
Meats cooked in sauces, venison and feathered game as well as well matured cheeses
Ready for drinking now but can be laid down for 3 to 5 more years.
