History of a soil :
From the plain of Carpentras up to the slopes of the 'Giant of Provence', with an elevation going as high as 500 metres (1'640 ft), the wine territory of the Vignerons du Mont Ventoux winery boasts an exceptional wealth of soils and microclimates.
The most spectacular variations depend mainly on the differences in level, owing to the climatic changes related to the altitude and to the transformations of the ground structure consequent to the erosion process. It was important that these outstanding wine areas be valued. It is now accomplished with the new line 'ALTITUDE'.
ALTITUDE 500 derives from a consistent selection of vineyards, located at a height of 500 metres and with a south-facing exposure; an area known by the name 'Saint-Nicolas'
Soils : stone-covered soils.
History of a know-how :
Optimal sanitary state of the harvest which is totally destemmed.
Each grape variety is vinified apart.
Long vatting with several daily ‘remontages’
Pumping-over of the vat juice onto the cap of solids.
Alcoholic fermentation at controlled temperature (28/30°C).
Blending after completion of the malolactic fermentation.
The wine is matured for 12 months in vats.
History of sensations :
Eye: Bright, dark garnet robe with purple hues.
Nose : Generous and complex nose - ripe red berries and stewed fruits - with spicy and toasted aromas and a touch of liquorice.
Mouth : Ample and powerful wine in mouth, with a generous fruit and a beautiful aromatic complexity - aromas of torrefaction and liquorice - and elegant texture.
Histoire of pleasure :
Roast and grilled meats, poultry and feathered game as well as medium strong cheeses.
Ready for drinking now but can be laid down for 3 to 5 more years.
