History of a soil :
The Côtes du Ventoux GRANGE DES DAMES is elaborated by the Vignerons du Mont-Ventoux so that they obtain a wine matching perfectly the criteria of the appellation, a reference-wine representing an optimal value. It derives from grapes harvested on the whole area of production of the winery: Bedoin, Saint-Pierre-de-Vassols, Crillon-le-Brave, Flassan et Modène. The vineyards are established on the south slopes of the Mount-Ventoux, the “Giant of Provence” benefiting of a very important exposure to sunshine and sheltered from the excesses of the Mistral. The altitude of the vineyards ranges from 200 to 580 metres.
Soils : decomposition of hard limestone and ancient alluvions.
History of a know-how :
Careful selection of the harvest which is totally destemmed.
Each grape variety is vinified apart.
Long maceration with several daily “remontage”.
Pumping-over of the vat juice onto the cap of solids.
Alcoholic fermentation at controlled temperature (28/30°C).
Blending after completion of the malolactic fermentation.
The wine is aged 6 months in vats.
History of sensations :
Eye : Dark garnet colour.
Noze : Open bouquet combining fruity and peppery aromas.
Mouth : Well balanced and pleasant wine in mouth with showing aromas of stewed fruits with hints of cinnamon and clove.
Histoire of pleasure :
To accompany grilled meats, delicatessen and medium strong cheeses.
Ready for drinking now but can be laid down for 2 to 3 more years.
Serve at : 17/18 ° C.
